More About This Coffee
This selective harvest from March 2025 used perfectly matured cherries (21–23 °Brix). Wet/washed with double fermentation: dry pre-fermentation in barrels, followed by 83 hours submerged at 18–23°C (final pH 4.0, 16 °Brix). Dried on African raised beds under partial shade for 22 days (18–28°C), reaching 10.8% moisture and 0.58 water activity for optimal preservation.
Note on Organic Certification
Due to high administrative costs from his dry mill and extreme pricing in Honduras last spring, Carlos opted not to certify this 2025 lot organic. We're partnering with him and exporter Cima Cafe to ensure certified status for 2026. See included photos of Carlos helping us plant shade tree saplings (grown at our nursery) at neighbor Fabio Caballero's farm in October 2025.
More About Finca La Joya
Founded in 2000, Finca La Joya spans 70 manzanas across 7 lots in Marcala and Santa Ana, La Paz (1,550–1,800 m.a.s.l.). Inherited by Juan Carlos Amaya from his father Don Santos, the farm evolved under Juan Carlos and wife Iris Chicas. After Juan Carlos' time in the U.S., they focused on specialty coffee. Today, Carlos (son) leads production, emphasizing sustainability.
