This sweet and juicy coffee was picked during the day and depulped in the afternoon, then wet-fermented between 16–24 hours before washing. Coffee producers generally wash the coffee two or three times before it is dried in either small "casa elbas"; mechanical dryers; or parabolic dryers. While mechanical drying takes between 25–40 hours, sun or parabolic (covered raised screens- see picture below) drying can take up to 15 days - well worth the wait for this incredible, delectable cup.

This micro-lot was produced by Franco Elias Hernandez, a member of the FUDAM cooperative,  located in La Union, Nariño.

Fundación Agraria y Ambiental Para el Desarrollo Sostentible (FUDAM) is a 300-member association of organic-certified (and Rainforest Alliance–certified) growers. Founded in the year 2000, FUDAM began with just seven producers who shared a vision of sustainable agriculture as well as environmental protection and development. Here in Nariño, the terrain differs greatly from other coffee-growing areas (Cauca, for example); due to the area's extremely high elevations, the towns and farms are much closer in elevation to each other, rendering the typical traverse from town to farm obsolete. In this coffee corner of the world, farms are surrounded by high peaks and rough roads. Because of this, communities of smallholders (like FUDAM) in this region are more dependent on each other for arranging production and gaining access to the specialty coffee market. 

FUDAM's membership believes firmly in the principles of sustainability that drove them to band together in the first place. When asked recently why the group continues to farm organically despite mounting pressure to rely on chemical inputs, the association’s leadership explained, “This is just how we live, these are our values and our way of life.” Needless to say, we're excited to welcome this carbon negative offering to the Tiny Footprint Coffee lineup, and are confident you'll love it in your cup.
